Easy Meals to Cook in a Campervan: 15-Idea Menu
A practical campervan menu of 15 easy meals — breakfasts, lunches and one-pot dinners that work on two burners with minimal washing up.
Cooking in a campervan is not a diet — it is a logistics problem. Two burners, a small fridge and one washing-up bowl. The answer is a short menu of reliable meals you can repeat without boredom, built around a handful of store-cupboard basics. Here is our 15-idea campervan menu.
The store cupboard that makes it work
Stock these and almost anything is possible: olive oil, salt and pepper, pasta, rice, tinned tomatoes, beans, tinned fish, cheese, eggs, bread, a bag of salad, onions, garlic and a jar of curry paste. Add local specials as you travel — a nice sausage, a block of Cornish cheese — and the menu stays fresh.
Breakfasts (15 minutes max)
- Porridge with honey and whatever fruit is in the van.
- Fried egg sandwich with brown sauce — the classic.
- Full English, halved: sausage, one egg, beans, toast.
- Toast and jam with proper coffee.
- Overnight oats prepped the night before in a jar.
Lunches
- Cold meats, cheese and crackers with pickles.
- Tomato, pesto and mozzarella toastie in the pan.
- Leftover dinner reinvented: cold pasta or rice with salad.
- Soup from a tin, bread and butter — cheapest meal on the road.
- Tuna or egg mayo on crusty bread with salad.
Dinners (one pot where possible)
- One-pan pasta: fry onion, add tomatoes and pasta, simmer until done.
- Sausage and bean stew with crusty bread.
- Garlic butter chicken thighs with tinned potatoes, all in one pan.
- Jacket potatoes in foil on the burner or the fire pit, filled with tuna and cheese.
- Curry from a jar with rice and a naan heated in the pan.
Three rules that save the trip
- Cook the biggest pot last. Do the evening meal first, then use the residual pan for breakfast.
- Batch once, eat twice. Make double at lunch and dinner becomes ten minutes.
- Wash as you go. A single bowl of hot soapy water between courses beats a mountain at bedtime.
Cooking outside changes everything
On warm evenings, cook on a two-ring stove on the camping table. Burgers, stir-fries and anything smelly — bacon, fish — taste better and keep the van clean. On wet nights, a pan lid as a shield and good ventilation keep the van liveable.
The best campervan meal is the one you can cook from memory in the rain. Build your menu around that, and the van kitchen becomes a pleasure. If your van lacks a decent hob, browse campervans for sale and look for a proper two-burner setup.
